Professional thief Max Burdett (Pierce Brosnan) and his girlfriend, Lola Cirillo (Salma Hayek), stole two of the three most famous diamonds, known as Napoleon diamonds from FBI Attorney Stanley P. Lloyd (Woody Harrelson). But Lloyd shoots Max before passing out from being gassed by the thieves. Max survives and tells Lola to find the diamond. She does, leaving in its place the one-dollar bill she had acquired as a tip for cleaning the agent’s front window (while in hiding). Max and Lola flew to Paradise Island in the Bahamas.
Agent Stanley P. Lloyd appears 6 months later and accuses Burdett of plotting to steal the third Napoleon diamond, which is on a ship that has been standing for a week on the island. He denies this, and unknowingly turns the tables and becomes a friend of the detective Lloyd, showing him the joy Paradise Island can offer, even paying for a more expensive suit, a bridge suite, as long as Lloyd is present.
Lloyd, without exception, quickly adapts to the simpler Caribbean life and collaborates with Sophie, a local police officer, to try to photograph Max at last when he steals a diamond, which Max visits and later allows temptation to steal. Henri Mooré, a powerful rich man, famous for what some consider to be a gang, learns Burdett’s fascinating history as a thief and offers him the added benefits and joys of island life for diamond mining.
Burdett, still looking for a diamond, pretends to work with Mooré, and gives him a false plan on how to steal the diamond (he had been associated with Stan before), having no trouble keeping ahead of his nemesis in the meantime. Lola fired Max after he broke his promise to spend the sunset for the first time on her new porch where she worked and after discovering she was lying about writing his vows to him. Max is forced to have sex with Stan, and they share their thoughts on each other’s lives. The next morning, the authorities and Sophie found them, revealing that Stan FBI’s license had been suspended.
They meet to win Sophie and Lola, but Max still agrees and uses the ski trip as a distraction to steal the diamond, which works best when Mooré’s husband tries at the same time but is caught after the fake plan doesn’t work. . After the fall, Lola leaves Max after Lloyd shot Mooré dead while searching for a diamond. Max recognizes her mistake, writes down her vows, and is able to get Lola back to the airport before she leaves, advising her on “the first diamond he ever bought”.
The next day, Max meets Stan while he is celebrating, revealing that he stopped him and allowed Max to do all the work while he later found the diamond. Max admits that his enemies have won this victory, and he just enjoys living his life with Lola, watching the sunset with him.
While Max and Lola were having fun at sea, Max used Stan’s car remote control to get to the airport, used it to confuse Stan, and quickly saw what was happening and could do nothing. Lola asks Max if this is the “last time”, and he agrees. “After the Sunset.”
